北宋中期，在福建督造貢茶的宋廷重臣蔡襄（大書法家）總結數十年來的斗茶習俗，撰寫了一部茶藝史上具有劃時代意義的著作《茶錄》（1054年）。書中載：“茶色白，宜黑盞。建安所造者紛黑，紋如兔毫。其坯微厚，炯之久熱難冷，最為要用。出他處者，或薄或色紫，皆不及也。其青白盞，斗試家自不用。”《茶錄》充分肯定了建盞的功用和獨秀地位?！恫桎洝穯柺篮?，斗茶文化推波助瀾地在朝野傳播，建盞中的優品成了皇族、士大夫不惜重金追尋的寶物、文壇巨匠抒發懷謳歌的極品。建窯由此進入鼎盛時期，生產規模不斷擴大，并生產底足銘有“供御”、“進盞”的建盞進貢朝廷。建窯的名貴品種有兔毫、鶴鴿斑（即建窯油滴）、曜變（即毫變）。兔毫盞是建窯主打產品，它的主要特征是黑釉表面分布著雨絲般條紋狀的析晶斑紋，類似兔毛胎呈鐵黑色，里滿釉。外施bai釉不到底，腹下部du釉垂流如淚痕。敞口，斜壁，圈足。底無釉，露出黑褐色堅質胎。盞內外壁施以黑釉，釉面析出棕褐色兔毫斑紋碗口釉呈醬色，口下漸為褐黑相間，近里心為純黑色。釉中有絲狀黑褐色兔毛般結晶，俗稱“兔毫斑”。。
