醬釉又稱：“柿色釉，紫金釉”，是一種以鐵為呈色劑的高溫色釉，其釉料中含氧化鐵和氧化亞鐵的總量較高，達5%以上。醬釉的出現始創于北宋的北方窯口，如定窯、耀州窯等窯場中均有燒造，以定窯醬釉最著名。明曹昭《格古要論》中“有紫定色紫，有黑定色黑如漆，土具白，其價高于白定”的論述。所謂紫定并非紫色，其釉呈棕紅色，實際上與今天芝麻醬色調相近的釉，故而得名。提起醬釉，往往給人以含糊的感覺，有人通稱為“紫定”。但可以肯定，古人是能夠從直觀視覺上辨別這些顏色的。還有人將醬釉稱為“絳釉”“赫釉”“赭釉”“褐釉”等，這些顏色在古代文獻中也有明確記載。至于用“醬色”來形容瓷器釉色，其概念含義本身也是十分寬泛的，令人難以界定出準確色位。以醬類作料的代稱作為顏色名詞使用似乎出現得較晚。清代以后，醬色已經是與紫、紅、青、綠、黑等并列的顏色專有名詞了。
